Sometimes I spoil my family with a very tasty and healthy breakfast - cottage cheese with fruit. Especially in the summer, during the season of berries and fruits, such a dessert will come in handy! And in hot weather, this dessert is just the thing when you don’t really want to eat. Peaches and nectarines can be used as fruits, and apples and pears are suitable in winter. One way or another, this dessert made from cottage cheese and fruits turns out very tasty! You can even take canned or frozen fruits and berries.

For those who are on a diet, I have no doubt that this recipe will also be to their liking. After all, cottage cheese with fruit can even replace lunch or dinner, as it turns out to be quite filling. I prefer to use low-fat cottage cheese and low-fat sour cream (15%). The result is low-calorie and healthy food!

In addition, cottage cheese contains calcium, which is very beneficial for teeth and bones. Therefore, you need to eat it periodically. Fruits, especially in summer, also contain a lot of different vitamins, which makes dessert even healthier! And children who don’t really like cottage cheese gobble it up with fruit with a bang. Therefore, mothers can also take note of this recipe.

The amount of ingredients is indicated for 2-3 servings.

  • Sour cream - 2-3 tbsp. l. per serving

Dessert with fruits

We will need:

  • Cottage cheese – 300 g;
  • Sour cream 20% - 150 g;
  • Sugar – 2 tbsp. l.;
  • Gelatin – 1 tbsp. l.;
  • Strawberries – 200 g;
  • Kiwi – 2 pcs.;
  • Persimmon – 2 pcs.;
  • Milk – 100 ml.
  1. The gelatin needs to be dissolved; to do this, pour it into a dry, clean container, fill it with heated milk, and leave it for 30–40 minutes in a warm place so that the gelatin swells. If necessary, you can warm the mixture a little to completely dissolve, but do not let it boil.
  2. Mix cottage cheese, sour cream and sugar well and turn into a homogeneous mass using a blender. Add the gelatin mixture to the curd mass and stir thoroughly.
  3. Peel some fruits and rinse with warm water. Cut into several small pieces.
  4. Strawberries must first be thawed and cut into two or four parts.
  5. We form the dessert: lay out the strawberries in the first layer, pour the resulting curd mass on top. The next layer is kiwi, then fill it in as well. We do the same with persimmons. The top layer should be a filling of curd mass.
  6. Place the dessert in glass molds and refrigerate for an hour. You can decorate with mint sprigs or grated chocolate.

After hardening, the curd mass resembles ice cream, it turns out very tasty, sweet and airy!

Curd dessert without sugar

Now let’s look at and prepare an equally easy dessert in the form of a cake. Of course, everyone in the household will love it and will become a signature dish for any occasion.

Ingredients:

  • Low-fat cottage cheese – 500 g;
  • Sour cream 10% - 300 g;
  • Honey – 3 tbsp. l.;
  • Gelatin – 1 tbsp. l.;
  • Fruits.

To prepare the curd mass - the base, as in the previous recipe, you need to completely dissolve the gelatin, mix the cottage cheese and all other ingredients, except fruit, add gelatin. Mix until a high-quality homogeneous mass is obtained.

You can also add any fruits to the dessert, if desired. They go well together and are liked by many: strawberry - banana, kiwi - grapes, raspberry - cherry.

Pour the base into the cake pan, at the same time arrange the fruits in a chaotic order, filling them. Fill the form with fruit, leaving no free space if possible. In order for our cake to harden, you need to place it in the refrigerator for half an hour.

Due to the large amount of fruit, the dessert becomes healthy and fortified.

For those who stick to a certain amount of calories, fats and carbohydrates every day, you can use the following tricks that will allow you to cook and eat desserts with pleasure without guilt:

  1. Use low-fat or low-fat cottage cheese. This technique will significantly reduce the number of calories per 100 grams of the finished product.
  2. Replace sour cream with low-fat soft cottage cheese or yogurt; this will not change the taste at all, but it will reduce the amount of fat and carbohydrates.
  3. Eliminate sugar and honey if desired and necessary. The dessert will be sweetened by the fruits included in the recipe.
  4. Choose fruits with the least sugar content, avoid bananas and grapes.
  5. Consume dessert before lunch, this way you will better maintain your figure and not harm the digestion process.

You can use not only fresh fruits, but also canned ones or prepared for the winter in the form of compotes. Cherry, plum, peach, apricot will wonderfully decorate the dessert and will be a delicious addition to it. With this approach, the recipe becomes more accessible and homemade.

Change your favorite recipe to your taste. To prevent the curd mass from being monotonous, you can decorate the base with beet juice, carrots or artificial colors (for whom it is not forbidden).


Spices such as vanilla, cardamom, cinnamon will add a new taste and lovely aroma to the dessert.

Be sure to purchase only quality products! It is better if they are completely homemade, bought from grandma at the market.

Curd dessert without gelatin: possible or not

The pressing question of how to replace gelatin in desserts, in particular in cottage cheese, can be easily resolved. There are substitutes that are absolutely in no way inferior to gelatin. From what can be easily found on sale is agar-agar. The rest do not reach the shelves for a simple reason - few people know anything about them. This is Irish carrageen moss, kudzu - the leader among Japanese thickeners, guar and xanthan gum and arrowroot - the rarest product.

Simple curd dessert without gelatin

Recipe:

  • cottage cheese - 310 g;
  • sour cream - 110 g;
  • granulated sugar - 110 g;
  • cocoa powder - 55 g;
  • vanillin (not vanilla sugar) - 30 g;
  • mint;
  • agar-agar - 2 tsp.

Technology:

  1. Boil water and pour in agar-agar. Leave for a quarter of an hour. During this time it will swell. Then bring to a boil and immediately remove from heat.
  2. Transfer the cottage cheese to a separate container.
  3. Add granulated sugar to the cottage cheese. If necessary, sugar can be replaced with powdered sugar or a sweetener.
  4. Then add sour cream to the cottage cheese. Mix. You can do this with a fork, but the best texture is obtained by beating with a blender.
  5. Divide the resulting curd mixture into a couple of equal parts. Add cocoa powder into one of them.
  6. Knead the part of the curd mass to which cocoa is added thoroughly until it becomes uniformly brown, without white spots.
  7. In the second part, add half the norm of soaked agar-agar.
  8. Add vanillin to the resulting mixture.
  9. Combine the curd mass with the rest of the agar-agar. Carefully transfer the resulting mixture into a plastic container.
  10. Place the container with cottage cheese jelly in the refrigerator. If you need to prepare dessert as quickly as possible, put it in the freezer. But you need to make sure that it doesn’t freeze.
  11. As soon as the white layer hardens, remove the container from the refrigerator.
  12. Add the remaining agar-agar to the part to which cocoa is added.
  13. Mix the curd mixture with agar-agar well.
  14. Move it to the white layer.
  15. Place in the refrigerator for 15 minutes.
  16. Then take out the dessert, portion it, decorate with a mint leaf and serve.

Steamed curd dessert

Recipe:

  • cottage cheese - 1 kg;
  • semolina - 110 g;
  • sugar - 155 g;
  • raisins - 155 g;
  • vanillin - sachet;
  • butter - 45 g;
  • sour cream/jam - 210 g;
  • large egg - 2 pcs.

Technology:

  1. Separate the whites from the yolks. Beat the whites with a mixer until stiff peaks form. Grind the yolks with granulated sugar.
  2. Soak raisins in boiling water for five minutes
  3. Grind the cottage cheese through a sieve. Add semolina. Add the ground yolks and vanillin. Add raisins at the very end.
  4. Stirring gently, add the whipped whites.
  5. Grease pudding molds with butter. Move the curd mass there.
  6. Place the molds on the steamer insert. Steam for half an hour.
  7. If you don't have a double boiler, you can use a saucepan. Pour hot water into it until it reaches almost the middle of the mold. Close the lid and cook for half an hour.
  8. Serve pudding with sour cream or jam.

Soufflé “Cottage cheese with apple”

Recipe:

  • cottage cheese (not grainy) - 200 g;
  • large sweet apple - 1 pc.;
  • large egg - 1 pc.

Technology:

  1. Process the apple and, without peeling it, grate it on a coarse grater into a bowl.
  2. Add cottage cheese and chicken egg to the same bowl.
  3. Mix everything thoroughly with a fork. If the consistency is a little runny, don't worry.
  4. Transfer the curd mixture into microwave-safe molds. Ideally, it is silicone, but any that are available will do. You need to fill the molds to the very top - the soufflé does not rise during cooking.
  5. Place the molds in the microwave. Checking for doneness is simple - try touching the surface of the soufflé with your finger. If there is a trace of cottage cheese on your finger, cook for a couple more minutes. The color of the finished soufflé is cream.
  6. The soufflé can be consumed both hot and cold. It is recommended to sprinkle it with powder before serving.
  7. The dessert can be stored in the refrigerator for up to three days.

Curd desserts are a favorite treat for many children and adults. And the point is not even that such desserts are incredibly tasty and tender. They are also very useful for the human body. There is the necessary amount of protein and a large amount of essential minerals.

Suffice it to mention the high content of calcium, phosphorus, potassium, iron and manganese in desserts of this type. But you need to be extremely careful. Storage of curd desserts is limited to three days, then the fermentation process begins. Therefore, you need to eat them quickly, without reaching the deadline. With fruit, tender, light, jelly-like (gelatin is used in preparation), can be made with various fruits and berries, great in the summer at the dacha (but generally good at any time of the year and anywhere), a good alternative to ice cream.

This curd dessert can be made more or less sweet depending on your preferences (and this is due not only to the amount of sugar, but also to what fruits and berries you put there). Please note that you can put not only fresh fruits and berries (as in our photographs), but also canned ones. Canned peaches or apricots work very well, and pineapple slices are also good. Do you make preparations in the form of compotes? Great! Cherries, plums, apples, pears from homemade canned compotes are wonderful in this dessert. In general, here you can get creative and use in this fruit dessert everything that suits your taste with cottage cheese and with each other. Since the dessert is prepared in portions, you will need bowls or bowls, or at least wide glasses (in transparent glass forms, dessert with fruit looks very tempting!).

Need to:

  • Cottage cheese (soft, fat content at your discretion, or even low-fat) – 350 grams
  • Sour cream – 200 grams
  • Granulated sugar - 3 heaped tablespoons (if you want to make the dessert sweeter, you can use 4-5 tablespoons)
  • Gelatin – 12-15 grams (about 1 tablespoon), if you want your dessert with gelatin to look like a very dense and “steep” jelly, you can add up to 20 grams of gelatin
  • Boiled cooled water – 100 ml (0.5 cups)
  • Fruits and berries of your choice (we have: 1 banana, 1 kiwi, 5-6 strawberries, a small handful of black and green seedless grapes)

Preparation:

Fruits and berries must first be washed, dried and peeled. If you use oranges or tangerines, peel them to the pulp, that is, remove the thin skin that covers each slice. Pour gelatin into a small bowl with cold boiled water and leave for 10-15 minutes.

While the gelatin is soaking, cut the fruits (and berries if necessary) into thin slices or small pieces. Set aside a few of the cutest pieces to decorate the top of the curd dessert.

The cottage cheese should be free of lumps, so if you bought non-soft paste-like cottage cheese, first use a blender. Cottage cheese should be mixed with sour cream and sugar and lightly beat.

Melt the gelatin at a minimum heat level or in a “water bath,” stirring constantly, until liquid.

The melted gelatin needs to be poured into the curd mass and mixed until smooth (faster, of course, with a mixer).

Now we begin to lay out the dessert into molds (cremens, glasses). First, a small layer of curd mass, then fruits and berries “in artistic disorder,” then again a layer of curd mass and again fruits and berries. And so 3-4 times ( watch our video recipe!).

We decorate the last top curd layer with the same fruits. You can use chocolate chips or ready-made cake decorations instead of fruit (or together with them) for decoration. Portioned and garnished cottage cheese dessert place in the refrigerator for at least 1 hour (more is possible). Then we serve it on the table at the right time and enjoy it slowly!

Cottage cheese dessert with fruit or curd mousse- one of my favorite breakfasts, to be honest. I really love to eat something tasty and sweet, but very often I have to limit myself, that’s why I like to have a sweet breakfast, because carbohydrates for breakfast do not harm my figure. About 3-4 years ago I could eat anything, at any time of the day, and not gain weight at all. But she matured a little and didn’t even notice how she started to get fat. I woke up only when I saw obvious changes in the reflection of the mirror, and my skinny jeans began to squeeze my sides! I bought scales for home and was horrified 😀 Since then, I have come a long way of external and internal changes, tried different diets until I came to my real healthy lifestyle and developed a strategy for maintaining a comfortable weight for myself. I won’t name it, because it’s different for everyone, of course. But I started talking... Someday, I think, I’ll write a big article about what principles of healthy lifestyle and proper nutrition help me keep myself in the right shape, but for now I’ll return to the topic.

So, curd and strawberry mousse. Or curd-berry mousse, curd-banana mousse, curd-blueberry mousse, curd-chocolate mousse, curd-cream mousse, call it what you want, and I will give you a basic recipe for a cottage cheese dessert, to which you can add your favorite toppings. Yes, absolutely any! And, of course, I’ll show you a photo of curd mousse and its many variations.

Why did I start talking about staying fit? Because it’s summer and all the beauties and many handsome men are thinking about it! And low-calorie desserts made from cottage cheese will help us with this, especially if it dietary dessert of cottage cheese with fruit or curd mousse and really especially if you eat it for breakfast and not for dinner :) And it doesn’t take much time at all, delicious no-bake cottage cheese desserts are prepared very quickly and very simply!   • for berry sauce:

Cooking method

Cottage cheese with fruit, the recipe for which I will now tell you, is incredibly quick and easy to make. We take homemade cottage cheese (this is important, such cottage cheese is much tastier, healthier and not so crumbly, which is good in this case!) Add sour cream or cream to the homemade cottage cheese and grate the butter. Of course, don't add butter if you are losing weight, but if you are just keeping fit, but that's okay, it tastes much better with it!


You can, in fact, use store-bought baby cottage cheese, but I like to make it myself; it’s not at all difficult, as you can see, and it’s definitely much tastier. Tested personally 😉 By the way, curd mousse for children who do not recognize cottage cheese (I was like that once)) is a lifesaver! They won't even understand that curd cream mousse is made from cottage cheese! And they will definitely appreciate my ! They are truly perfect, I am not lying or bragging, I just, after a long search for perfection, came up with a magical recipe for cheesecakes in which the cottage cheese looks like a piece of heavenly cloud 😀 We fill everything with powdered sugar or natural sweeteners of our choice and take out a blender.
Curd mousse is prepared in a blender in a minute; I personally use an immersion blender, which results in much less dirty dishes in the end. We put the immersion blender into the bowl and grind everything very well until completely homogeneous.
Depending on how much sour cream or cream you add, the consistency of the curd cream will change from more liquid to more solid. Very soon I will use such a delicate curd and sour cream for another incredibly tasty dessert - for cottage cheese cake or cheesecake. This curd mousse is great for cake! But more on that later. Now is the time to add the toppings. The first thing you can put in is nuts. I love cashews, but you can use any. Walnuts, for example, are healthier, but for some reason I can’t eat them. We put them in some kind of bag and hit them, for example, with the bottom of a glass.
Pour in and mix. If you want to get chocolate mousse, add cocoa brewed in a glass of hot water (just let it cool first!).
Now it's time for serving. I'll show you several options. In the first one you need to prepare berry sauce. I'll make lingonberry sauce, but now you can make both strawberry and raspberry sauce. Berries that are in season are perfect, but frozen berries will do just fine. Place them in a chopper, sprinkle with powdered sugar and grind thoroughly.
Now we take ordinary glasses and start laying out the beauty. You can put all the curd cream mousse at once, and then top it with berry sauce, or you can make it a little prettier. Add a couple of tablespoons of a delicious dessert made from cottage cheese and nuts.
Spread a couple more tablespoons of berry sauce on top, and then curd mousse again.
Add another spoonful of berry sauce.
And sprinkle with chopped nuts.

The first version of dessert from cottage cheese with fruit or curd mousse with berry sauce is ready. The second option is to put these same berries in the curd mousse with berries initially. I chose blueberries for this because, firstly, they are very tasty, and secondly, their ability to color is amazing. Mix the blueberries well with the curd mass, it will become a very beautiful lilac color!
The third option, my favorite, is curd mousse with strawberries, bananas and peaches. In general, cottage cheese and banana are a magical combination. However, as with other fruits and berries. Just a strawberry dessert with cottage cheese is also gorgeous. Again, take the required number of glasses and add 1 tablespoon of curd mousse to each.
Wash the fruit and cut the strawberries into halves and the banana into slices. Place a layer of banana, then a layer of strawberries.
I personally sprinkle flax seeds on top, because they are very healthy and rich in omega-3, and flax seeds in desserts are generally delicious!
Place another spoonful of sweet curd on top.
Cut the sweet peach or nectarine into pieces and add another layer of fruit.
Sprinkle with flax seeds, add another spoonful of sweet curd and decorate the top of the creation with three pieces of fruit and seeds.

Dessert of cottage cheese and fruit is ready. You can do without any one ingredient.

The essence of the curd and fruit diet

Curd and fruit diet 4 days


On the cottage cheese and fruit diet, you will eat according to a plan for 4 days, which will allow you to become 3 kg slimmer. The first and third days are cottage cheese; on the second and fourth days the diet is diluted with other protein foods.

Menu day 1.

Breakfast: 125 g of cottage cheese, half a grapefruit, a cup of green tea.

Lunch: 125 g cottage cheese, 100 g melon.

Dinner: breakfast menu.

Menu day 2.

Breakfast: banana, 200 ml low-fat milk.

Lunch: 180 g of boiled meat (beef, veal), 2 bananas.

Dinner: banana, 1 soft-boiled egg.

The third day of the diet repeats the first, and on the fourth day the diet is the same as on the second.

It will be better for your stomach if you consume fruit 15 minutes after eating cottage cheese.

A week of losing weight on cottage cheese and fruits


The fruit-curd diet menu for a week includes 450 g of cottage cheese, which is divided into 4-5 doses. Add berries and fruits to a portion of cottage cheese - orange, grapefruit, apple. If you feel hungry, snack on any fruit. You can make casseroles and cheesecakes from cottage cheese.

Approximate menu for one day could be like this:

Breakfast: 100 g cheesecakes, fruit salad (kiwi, pear, apricot, pineapple), green tea.

Second breakfast: orange.

Lunch: cottage cheese casserole with berries without sugar (you can use a little natural honey) - 200 g, vegetable salad - 160 g.

Afternoon snack: 120 g of sour berries (strawberries, currants, cherries).

Dinner: 150 g of low-fat cottage cheese, a large green apple, a cup of herbal tea.
